About the Recipe
This delicious recipe is an anti-inflammatory recipe that is also FODMAP friendly.

Ingredients
1 medium zucchini, grated
1 cup lactose-free kefir
1 tablespoon garlic-infused olive oil
1 teaspoon ground cumin
1 tablespoon fresh mint, chopped
1 tablespoon fresh cilantro, chopped
Salt, to taste
Black pepper, to taste
Preparation
In a bowl, combine the grated zucchini and lactose-free kefir.
Stir in the garlic-infused olive oil and ground cumin until well mixed.
Add the chopped mint and cilantro, and season with salt and black pepper to taste.
Mix everything together thoroughly.
Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
