About the Recipe
This delicious recipe is an anti-inflammatory recipe that is also FODMAP friendly.

Ingredients
1 tablespoon olive oil
1/2 cup diced potatoes (peeled)
2 eggs
1/4 cup lactose-free milk
pinch of cayenne pepper
1/4 teaspoon cumin seeds
Salt and black pepper to taste
1 tablespoon chopped coriander or chives
Preparation
In a non-stick skillet, heat the olive oil over medium heat. Add the cumin seeds and diced potatoes and sauté until they are tender and lightly browned, about 8–10 minutes. We may use boiled potato instead, if preferred.
In a bowl, whisk together the eggs, coriander or chives and lactose-free milk. Season with cayenne pepper, salt and black pepper.
Pour the egg mixture over the potato and vegetable mixture in the skillet.
Cover the skillet and reduce the heat to low. Cook for about 10–12 minutes, or until the eggs are set.
Remove from heat and serve.
